My max stats L5 OTM evolved from 27 17/17/17 to 343 267/270/266 at L71. I have another L71 OTM also raised from L5 (I forget the stock stats) currently at 335 252/262/263. I don't like to spend a turn or two using buff/debuff moves (maybe this is the part where I suck at battles), so I'd rather go straight into a fight with the highest possible stats for my team. Also, the second OTM has a more noticeable disparity between the attack stat and the other stats compared to the first OTM.
There's obviously stronger rock type Mortys than OTM, as would be the case for other types and other Mortys in my team - I don't think everyone necessarily plays the strongest Mortys so why not go for the best version of the ones you do like or are most comfortable playing.

How important are max stat? It seems to any have minuscule effect when morty got to 100 lvl.

Agreed. I don't use TOTM anymore tho mine has 15 IV on atk & speed. Why? It's boring. I kinda shuffle my battling deck.
Anyway, I don't want to brag here, just to put a perspective:
To be honest, I don't remember I ever lost a battle, not once (maybe cos I'm still at lv 33 Rick).
I don't think it's cos my mortys are special. They're mortys, they're all dumb (don't get them cocky).
I think I win simply because of I switch morty and use item at the right time, much more than the stat of my mortys.
