Maximum stats refers to the optimal combination of Health, Attack, Defense and Speed points (HP, AP, DP and SP respectively) possible for any given Morty at their base level (L5). There's no official listing for these as far as I know, you can get this information by reading around these forums and comparing stats between 2 or more Mortys of the same kind that you catch in the wild.

A known method for always catching L5 Mortys is to pair up an L5 in your team with another Morty that is an L20 or higher. Your L20 will help you harvest a level by beating other Mortys in a single blow to cause more Mortys to appear in the dimension you're in until the one you're looking for appears. You will then start a fight with the wild Morty of your choosing, but then switch to your L5 to fight and capture the target Morty. Your best bet is to have a team consisting of 1 L20 and 2 L5 Mortys with at least one of them being a Normal type that doesn't take too much damage from Rock, Paper or Scissors Mortys and can deal only enough damage to wild Mortys so you can catch them before they're dazed and disappear.

When trading, there's a premium on L5s because as you fight wild and player Mortys, the L5 Morty will level up to have higher overall stats than a wild Morty that matches higher level Mortys in your team relative to your trainer level. For example, if you are an L30 trainer, your Mortys may be at most L59s and if your whole team consists of L59s then wild Mortys will start at that level and their stock stats will be lower than a Morty you have trained by hand starting from her or his base level.

Also, wild Mortys at higher levels will have more attacks but they may not be the attacks you're used to for that Morty (they might have 2 offensive attacks, a paralyze type attack or a buff, debuff attack). It's better to pick and choose your Morty's attacks as you level up and gain experience with your Morty so you know when to use which attack as you fight other Mortys. You can still get the attacks you want for a higher level wild Morty provided you spend a Club Rick Credit at Morty Labs, but even then you'll want to start getting practice with your Morty's attacks and other abilities early on.

How important are max stat? It seems to any have minuscule effect when morty got to 100 lvl.

in my opinion, i think at lv 100 could be a difference of 32 points on each stats

I’d focus more on the competitive side in this game if they added like a tournament mode, or really anything other then just random battles with players. I find not having max stats just as useful overall. IMO ofc.
